I have a couple of new recipes for you all since there was some
interest on the other ones I posted.
First we have hommus - yeah a sand man dip but fuck its good with some
fresh turkish bread - and simple to make too. This is the best hommus I
have ever had too.
Hommus (serves 4-6)
400g can chick peas (drained and rinsed well)
150ml olive oil
50g tahini
4 cloves of garlic, crushed (strong - you might not want so much)
Juice of one lemon
Pinch of salt
Blend chick peas, salt, garlic, tahini, lemon adding the oild slowly till
you get the right texture - too much oil and it resembles vomit. (hommus is
fairly thick)
Secondly in b0gs premiere cooking journal we have calamari - or squid. Now
im not talking that rubbery fried shite you get at the corner store - this
is the good stuff. Buy a whole fresh squid and gut and cut it into strips.
(if you odnt know what you are doing ask the person at the fish market - or
they might do it for you). Marinate it for 4 or so hours in a marinade of
olive oil, heaps of red wine, salt, fresh cracked pepper, lemon juice,
crushed tomatoes and a bit of dill.
To cook the calamari heat a bbq up till ist really hot and thros your
calamari and marinade on the bbq hot plate for 6-8 mins moving it
constantly - the marinade should boil off and smell awesome - leaving it
thick and coating the calamari. Then put it on the really hot grill part
for another 4-5 mins, moving constantly once again (it pays not to chop it
too fine at the start otherwise you will lose half of it at this stage -
anyway rough cut looks cooler). Serve it hot straight from the bbq - maybe
with a dipping sauce - but it doesnt need it.
