Arroz con Pollo (chicken with rice - serves 6-8 - I halve it)
1 tbsp olive oil
1.5kg of chicken thigh cutlets ( I just use breast or thighs and chop it
into large chunky strips)
2 chorizo sausages, sliced
1 large red onion, sliced
4 cloves of garlic, crushed
2 tsp of ground cumin (i put more in)
2 tsp of sweet paprika (as above)
4 large (1 kg) tomatoes, choppped (I use tinned tomatoes - easier)
1 cup of chicken stock
2 tbsp hot chilli sauce
2 tbsp chopped fresh oregano
2 tbsp lemon juice
rice
Heat oil in large pan; cook chicken, in batches, untill browned both sides
and tender. Discard fat from chicken. Add chorizo to same pan and cook
untill browned. Add onion and garlic; cook, stirring untill fragrant. Stir
in tomatoes, stock, sauce, oregano and juice. Return chicken to pan. Bring
to boil, simmer, covered, about 30 mins or untill chicken is tender. Serve
on rice.
This is one of my favourite dishes to cook - it is reliatively awesome but
tastes fantastic. Last time I cooked it, I gave two of the girls I live
with a taste and immediatly got two marriage proposals :P
