Inspired by our b0g-Chef r0XX0r & B.I.G.'s new avatar...
...I wanted to share with my fellow b0ggers today's breakfast.
Gather up:
1- can Spam (yummy!)
Huevos (eggs for you non-Spanish speaking folks)
Corn tortillas
Cayenne pepper (unless you're a wuss!)
Garlic salt
Ground black pepper
Grated cheese (your choice, this was Monterey Jack)
Cilantro (coriander to some of you)
Molcajete salsa (I'll give you the "cheater" version
below)
Start by slowly browning the thinly sliced Spam over medium-low heat:
Set them aside & put a couple in a small pan.
Add 2- eggs
Sprinkle with cayenne pepper, garlic salt, & black pepper to taste.
Cook over low heat until the egg whites are just getting cooked through.
Flip eggs & Spam to finish cooking for just a few moments.
While this is going on, warm your tortillas on a Comal
(Our friend brought our's from Honduras. I take it to be made from
the front fender of a '38 Ford! :) )
Put warmed tortilla on a plate
Slip the eggs out of the pan on top of the tort
Sprinkle on some grated cheese
Scoop a few spoonfuls of CMS (Cheater Molcajete Salsa)
Garnish with cilantro
and serve!!
This is the 1st time I've made this. Mrs. Ego isn't too hip on
Spam & I wanted to find a way to overcome her prejudice about the
stuff.
Plus, we just found it on sale & brought home TWO CANS!!
Whooo-hoooo!!
CMS (Cheater Molcajete Salsa):
2- handfuls of dry chili pods. (Arbol, New Mexico, your favorite will
do.)
1- handful fresh peeled garlic
1- 28 oz can (or equivalent) diced tomatoes
Roast dried chilies on cookie sheet in the oven.
(They only need a few minutes. This is almost an art. Don't go away
from them as they will burn quickly & fill your kitchen with smoke that
you're sure will kill you. Those who have done this know what
I'm talking about!!)
Add all 3- ingredients to a blender & blend until all is broken
down.
Salt to taste.
This "cheater" version is a far cry from the authentic way of
making this salsa. I'm almost embarrassed to make it as I learned the
"real" way from my Mother-In-Law.
